
The St. Regis Langkawi is set to welcome diners to an exclusive culinary collaboration as part of its acclaimed Gastronomy Series, bringing together two celebrated chefs for a limited two-night experience.
Taking place on 31 July and 1 August 2026, the event will feature Chef Aidan Low, Chef-Owner of One MICHELIN Star restaurant Akar Kuala Lumpur, alongside Chef Marco Portal, Chef de Cuisine of Kayuputi. The collaboration promises a refined seven-course menu inspired by Malaysia’s rich culinary heritage, complemented by bespoke cocktail pairings crafted with RAKSASA, a Malaysian rice wine-based spirit.
A Celebration of Malaysian Terroir
The eighth chapter of The Gastronomy Series places Malaysia’s diverse ingredients and culinary traditions at the heart of the dining experience.
Chef Aidan Low has built his reputation around showcasing local produce through contemporary Malaysian cuisine. His restaurant, Akar, received One MICHELIN Star in the MICHELIN Guide Malaysia 2026, recognising his commitment to highlighting the country’s biodiversity, indigenous ingredients and regional flavours.
Named after the Malay word for “root”, Akar reflects Chef Aidan’s philosophy of honouring Malaysian terroir while presenting familiar ingredients through modern culinary techniques.
Two Chefs, One Exclusive Menu

Working alongside Chef Marco Portal, guests will enjoy a specially curated seven-course menu that combines Akar’s contemporary Malaysian approach with Kayuputi’s Asian-inspired fine dining style.
The experience begins with Scallop Ceviche featuring Jambu Air Ice Crudo and Jicama, followed by Giant Bamboo with Kaviari Caviar and Sea Prawn. Other highlights include Dry-Aged Duck with Port Wine Glaze and Miso Caramel, as well as the signature Trader’s Rice served with Abalone and Lauk Pauk.
The evening concludes with a dessert inspired by nostalgic Malaysian flavours, featuring Banana and Jackfruit Mousse, Hazelnut Praline, Marshmallow Fluff and Caramel Sauce.
Bespoke Cocktails Inspired by Local Ingredients
Complementing the menu is an exclusive cocktail pairing created in collaboration with RAKSASA, a Malaysian-crafted rice wine-based spirit.
Each cocktail has been specially developed for the event using locally sourced ingredients and traditional production methods. The pairing is designed to enhance the flavours of every course while showcasing Malaysia’s growing craft beverage scene.
The collaboration reflects a growing appreciation for local ingredients, not only in cuisine but also in premium beverage experiences.
Continuing a Signature Culinary Series

The Gastronomy Series has become one of The St. Regis Langkawi’s signature dining programmes, regularly bringing renowned chefs to Kayuputi for exclusive collaborations.
