For Drinks: Sparkling Apple Cider Mocktail
Prep time: 10 minutes, serves: 3 to 4 pax
Ingredients:
2 tbsp Alce Nero™ Apple Cider Vinegar
5 tbsp Alce Nero™ Organic Wildflower Honey
2 liters of sparkling water
2 oranges ( juiced)
4 limes ( juiced)
1 grapefruit (juice)
Rosemary
Ice cubes
Method:
1. Well combine all the ingredients above in a jar.
2. To each serving, add sliced orange, lime, grapefruit, and some ice cubes in a glass.
3. Pour the drinks over the fruit. Add a small sprig of rosemary and enjoy immediately.
For Starter: Saucy Rainbow Crostini
Prep time: 10 minutes, cook time: 25 minutes, serves: 3 to 4 pax
Base spread:
100g Alce Nero™ Organic Pasta Sauce with Vegetables
2 tbsp Alce Nero™ Apple Cider Vinegar
Topping:
75g Ayam Brand Sweet Corn (drained)
75g Ayam Brand Processed Peas
2 tbsp black olives (pitted and sliced)
10 cherry tomatoes (sliced into rings)
300g parmesan or mozzarella or other cheese that will melt well (grated)
Other Ingredients:
1 French Loaf baguette cut into 1.5 to 2 cm slices (approximately 15 to 20 slices)
2 tbsp Alce Nero ™ Organic Extra Virgin Olive Oil
1 tbsp minced garlic
Method:
1. Heat the oven to 200C.
2. Line a baking sheet with parchment paper. Brush Alce Nero™ Extra Virgin Olive Oil on both sides of each slice of bread. Sprinkle minced garlic on each slice. Toast for 7 minutes on each side, until crunchy.
3. Mix the Alce Nero™ Organic Pasta Sauce with 1 to 2 tbsp of Alce Nero™ Apple Cider Vinegar.
4. Once the bread is toasted, geNero™usly spread pasta sauce as a base. Next, add a layer of grated cheese so other ingredients will adhere.
5. Then load up with Ayam Brand Sweet Corn, Ayam Brand Processed Peas, black olive slices, and sliced cherry tomatoes. Finish with another sprinkle of grated cheese.
6. Increase oven temperature to 220C on the grill function. Pop the tray back into the oven for 5 to 10 minutes or until the cheese is melty and gooey.
7. Serve hot.
For The Main course: Meatballs In Spaghetti Nests
Prep time: 15 minutes, cook time: 45 minutes, serves: 3 to 4 pax
Meatballs:
500g minced meat
120g cup bread crumbs
60g cup minced onion
2 tsp black pepper
2 tsp cornflour
1 tsp salt
Ingredients:
240g Alce Nero™ Organic Whole Wheat Spaghetti
2 tbsp Alce Nero ™ Organic Extra Virgin Olive Oil
350g Alce Nero™ Organic Pasta Sauce with Vegetables
230g Ayam Brand Organic Baked Beans
400g parmesan cheese (grated)
100m basil (to decorate)
Cooking spray
Method:
1. Heat the oven to 180C.
2. Prepare meatballs by adding minced onion, black pepper, cornflour, and salt with minced meat and coat with breadcrumbs. Roll into balls. Bake for 25 to 30 minutes and keep aside.
3. Bring water to boil, add Alce Nero™ Organic Extra Virgin Olive Oil and salt. Cook Alce Nero™ Organic Whole Wheat Spaghetti following packet directions, drain and allow to cool.
5. Pour 1 cup cheese into the spaghetti pan and toss.
6. Spray a bowl with cooking spray.
7. Place the pasta inside the bowl, arranging Whole Wheat Spaghetti to make a nest.
8. Mix Alce Nero™ Organic Pasta Sauce with Vegetables with Ayam Brand Organic Baked Beans, and add the sauce inside the pasta nest.
9. Arrange the meatballs on top of the sauce. Sprinkle each with parmesan cheese.
10. Bake in the oven for 20-25 minutes or until the cheese has melted.
11. Cool slightly, decorate the meatballs, and garnish with chopped basil, ready to serve.
